Cider Roasted Root
Give vegetables with earthy roots the love they deserve by frying them with brown sugar, olive oil and apple cider vinegar. They begin by cooking the turnips, parsnips and carrots, as they will last the longest, about an hour. During the last 10 minutes, add the shiitake mushrooms or cremini or a mixture of both (so much tastier than the white mushrooms) to grill them with the rest of the vegetables. The result Sweet, tender and nutty vegetables with some crispness on the edges. Make sure to brown and caramelize the vegetables in two small pots instead of stacking them.
