Yucatan Style Pork
Try the holiday tradition with this Mexican pork stuffed with prunes, then cook it slowly in a spicy sauce. The sweetness of the plums stands in contrast to the spicy chilli powder. First you will slit the pork roast and fill with dried plums, then brown the pork. For the sauce mix the sauteed garlic and the onion with apple juice, apple cider vinegar, chilli powder, oregano and baked cinnamon. Add the pork and bake it for about two hours. When the pork is cooked, boil the sauce until reduced and serve with slices of meat.
