Bacon Wrapped Pork Loin
Get a double dose of piggy happiness with a wonderful bacon pork loin that will be the star of your party table. Surprisingly, it only takes 15 minutes to prepare and once baked, you just have to bake it once. You must first season the loin and then cover with a mixture of dried cherries, parsley and mustard. Wrap everything in the bacon and make sure the slices overlap and the ends are underneath. Roast the bacon with a combination of currant jelly and red wine vinegar toward the end of the cooking time. You get crispy bacon, an acidic and fruity cherry layer and tender, fluffy pork.
