Cookie Dough Stuffed Cupcakes
INGREDIENTS
FOR THE CUPCAKES
1 box of vanilla cake mix plus ingredients in the box
FOR COOKIE
1/4 c. unsalted butter, softened
1/2 c. light brown sugar
1 teaspoon pure vanilla extract
1/2 teaspoon Kosher salt
3/4 c. all-purpose flour
2 tablespoons whole milk
1/3 c. Mini chocolate chips
For storage
1 c. (2 sticks) unsalted butter, softened
3 1/2 c. powdered sugar
3 tablespoons whole milk
1 teaspoon pure vanilla extract
1 pinch of kosher salt
Mini chocolate pieces for decorating.
Mini chocolate biscuits for decorating.
DIRECTIONS
Preheat the oven to 350 ° and align two muffin molds with 20 cupcake molds.
Prepare the mixture in a large bowl according to the package instructions. Pour the batter into the prepared coatings and bake until golden brown, about 20 minutes. Let it cool completely and then remove half with a melon balloon or a teaspoon.
In the meantime, make a cookie dough: Mix butter, brown sugar, vanilla, and salt in a large bowl with a hand mixer until it is smooth and creamy. Add the flour and beat it over low heat until completely mixed. Beat in milk and fold in pieces of chocolate.
In each cupcake give a heaped spoon cookie dough. Press to flatten the top.
Making glaze: In a large bowl, mix the butter and half of the powdered sugar with a hand mixer. Add milk, vanilla, salt and the rest of the powdered sugar until soft and loose. Transfer to a pipe sack with a large round top.
Cupcakes filled pipe with vanilla icing. Garnish each with more mini chocolate chips and a mini-cookie.
