Chocolate Covered Cake Balls
Spray to a boil
1 cake mix box plus ingredients in the box
3/4 c. (1 1/2 butter sticks), softened
3 c. powdered sugar
3 tablespoons thick cream
1 teaspoon pure vanilla extract
Pinch of kosher salt
2 c. white chocolate chips
2 c. Half sweet chocolate chips
4 tablespoons of coconut oil, split
Preheat the oven to 350 ° and smear a 9 “x 13” baking pan with cooking spray. Prepare the cake mix according to the instructions on the box and distribute evenly in the prepared pan. Bake until a center-inserted toothpick comes out clean for about 30 minutes. Allow to cool and then break the cake into small crumbs.
In a large bowl with a hand mixer, beat the butter until smooth, then add the sugar and beat until blended. Add cream, vanilla and salt and stir until smooth. (Add more cream if the glaze is too thick).
Cover a large baking sheet with parchment paper. Stir the crumbs of the cake into the glaze and then shape the mixture into tablespoons the size of a spoon. Place in a prepared baking tray and refrigerate for 1 hour.
In a deep heat-resistant bowl, heat the white chocolate in the microwave and 2 tablespoons of coconut oil every 30 seconds until it melts. Repeat the process with semisweet chocolate.
Dip the cold cake balls into the melted chocolate and shake off the excess chocolate. Decorate with sprinkles immediately and return to the baking sheet. Cool until it hardens, 15 minutes.
