Strawberry Shortcake Cheesecake
Vanilla cake mix plus ingredients in the box
2 blocks of cream cheese, softened at room temperature
3/4 c. powdered sugar
2 c. cold heavy cream
3 c. Strawberries, 2 c. Sliced and the rest whole.
Grease an 8 “spring mold with cooking spray.
Mix all ingredients for the vanilla cake in a large bowl. Pour half a cup into a pan or enough to cover the bottom of the pan. (Keep the rest of the dough for a separate cake or cupcakes!)
Bake until golden brown and a toothpick comes out dry.
In a large bowl with an electric mixer beat the cream cheese for 2 minutes until lightly frothy. Add sugar to combine, then gradually add cream and beat at high speed until stiff peaks form.
Spring the strawberry slices along the edge of the tray so that the bottom of the strawberries touches the cake. Place all strawberries on the cake surface, leaving about ½ “of space, place the cheesecake mixture over it and refrigerate for 5 to 6 hours.
Garnish with chopped strawberries. Serve
