Frappuccino Cupcakes
INGREDIENTS
1 box of chocolate cake mix
3 big eggs
1/3 c. vegetable oil
1 c. prepared coffee
1/2 c. Mini chocolate chips
1 c. soft butter
5 c. powdered sugar
1/4 c. thick cream
1/4 teaspoon of espresso powder
Pinch of kosher salt
Shaved chocolate for decorating.
Chocolate syrup to drizzle.
DIRECTIONS
Preheat oven to 350 ° C and align two standard cupcake molds with cupcake liners.
Combine the cake mix, eggs, vegetable oil and coffee in a large bowl. Stir until everything is well mixed, then fold in the chocolate chips. Divide between the cupcake shapes and bake until a toothpick inserted into the center of a cupcakes comes out clean for about 18 minutes.
Allow the biscuits in the bowls to cool for 10 minutes and then place in a cooking chamber to allow them to cool completely.
Making glaze: Mix the butter and about half of the powdered sugar in a large bowl. Beat with a hand mixer until the mixture is smooth, then add the remaining powdered sugar, the heavy cream, the espresso powder and the salt. Beat until the mass is fluffy, then place the glaze in a piping bag with a large star point.
Frosting over chilled cupcakes. Decorate with chocolate chips and sprinkle with chocolate syrup.
