Chocolate Poke Cake
INGREDIENTS
FOR THE CAKE
Spray to a boil
cocoa powder
1 box of chocolate cake mix plus ingredients in the box
1 tin (14 ounces) sweetened condensed milk
1 c. Half sweet, melted pieces of chocolate
Chocolate pieces for decorating.
For storage
1 c. soft butter
2 1/2 c. powdered sugar
3/4 c. cocoa powder
2 teaspoons of pure vanilla extract
Pinch of kosher salt
1/4 c. thick cream (and possibly more)
DIRECTIONS
Preheat oven to 350º. Grease a 9 “x 13” pan with cooking spray and sprinkle with cocoa powder. Prepare the chocolate cake mixture according to the package instructions and bake until a center-inserted toothpick is clean for 30 minutes. Allow to cool completely
Push the cake over with the bottom of a wooden spoon. In a small bowl, mix the sweetened condensed milk and the melted chocolate. Pour the mixture into the holes.
Making glaze: In a large bowl with a hand mixer beat butter, powdered sugar, cocoa powder, vanilla and salt. Beat in thick cream (add more to the spoon until the consistency is creamy but may contain spikes).
Spread the glaze over the cake with an off-center spatula and sprinkle with chocolate pieces.
