Chocolate Cake

NGREDIENTS
FOR THE CAKE
4 c. all-purpose flour
2 c. sugar
1 c. Brown sugar
2 1/4 c. Cocoa powder processed in the Netherlands
3 teaspoons of baking powder
3 teaspoons of baking powder
Pinch of kosher salt
1 1/2 c. melted butter
6 big eggs, lightly beaten
2 1/2 c. strong black coffee
2 1/2 c. whey
1 tablespoon pure vanilla extract
For storage
3 c. soft butter
7 1/2 c. powdered sugar
2 1/4 c. cocoa powder
1 tablespoon pure vanilla extract
Pinch of kosher salt
3/4 c. thick cream (and possibly more)
4 c. Half sweet chocolate chips, divided

DIRECTIONS
Preheat oven to 350. Cover three round 8 “cake molds with parchment and spray with non-stick cooking spray.
In a large bowl, mix flour, sugar, cocoa powder, baking soda, baking powder and salt. Add the melted butter, eggs, coffee, buttermilk and vanilla and stir until smooth.
Divide the dough evenly between the cake pans. Bake until a center-inserted toothpick comes out clean for about 35 minutes. Allow the wire racks to cool completely before removing them from the compartments.
In the meantime, make glaze: In a large bowl with a hand mixer beat butter, powdered sugar, cocoa powder, vanilla and salt. Beat in thick cream (add more to the spoon until the consistency is creamy but may contain spikes).
Freeze the cake between the layers and cover the whole cake with frosting. Cover the whole cake with your hands with 3 cups of chocolate chips, if necessary with more. In the microwave, melt the remaining cup of chocolate chips, sprinkle the melted chocolate over the cake and serve.
