Champagne Cupcakes
INGREDIENTS
1 box of vanilla cake mix
1 3/4 c. Champagne (or Prosecco), shared
1 c. (2 sticks) unsalted butter, softened
4 c. powdered sugar
1/2 teaspoon pure vanilla extract
1/2 teaspoon Kosher salt
Sugar to grind gold, to decorate.
DIRECTIONS
Preheat oven to 350 ° C and align two cupcake molds with cupcake liners. In a large bowl, mix the cake mixture with 1 ½ cups of champagne. Bake as per package instructions and allow to cool completely before freezing.
In the meantime, prepare the champagne glaze: in a large bowl, prepare the butter, 2 cups of powdered sugar, vanilla, salt and the remaining 1/4 cup of champagne. Smooth with a hand blender. Add the remaining 2 cups powdered sugar and beat everything smooth and loose. Pour into a piping bag that has a large star point.
Chop the frosting over the cooled cupcakes and decorate with golden sandpaper sugar. Serve..
